Chocolate Brownie Pudding




 

I made this Chocolate Brownie Pudding this past Sunday to take down to Mom and Bill's house where we enjoyed a wonderful evening of great food and fantastic friends! This pudding was so good and sinfully rich! I made 1 1/2 recipes to fill a 9x13 pan. Next time, I will bake it a touch longer as it was gooier ( is gooier even a word?! y'all know what I mean though! ) than the pic above that was with the recipe. Twas sorta like a chocolate lave cake!

Ingredients

  • 2 sticks Unsalted Butter ( I used salted, and added 1/4 tsp extra salt!)
  • ¾ cups Cocoa Powder
  • ½ cups Flour
  • 4 Large Eggs
  • 2 cups Sugar
  • 2 teaspoons Vanilla Extract
  • 1 Tablespoon Kahlua ( I used hazelnut liqueur since I didn't have Kahlua.)
  • Vanilla Ice Cream, To Serve (Or whipped topping)

Preparation Instructions

Preheat the oven to 325ºF. Lightly butter a 9×9 baking dish.
Melt the butter and set aside to cool.
Sift the cocoa powder and flour together and set aside.
Beat the eggs and sugar on medium-high speed for 10 minutes, until very thick and light yellow. After 10 minutes, reduce the speed to low and add the vanilla, Kahlua, and the cocoa powder and flour mixture. Mix very slowly until just combined.
Slowly pour in the cooled butter and mix again until combined. Pour the mixture into the baking dish and place it in a larger baking pan. Add warm water to the pan until it comes halfway up the side of the dish.
Bake for 1 hour. It will look like it’s under-baked but it isn’t!
Remove from the water and place in the fridge to cool. Serve alone or with ice cream.

a wannabe do-er

I wish I was more inspired.....to actually do the things I dream of doing!!! Such as completing a new dress to wear Sunday morning, giving my file cabinet a chevron face lift, painting abstract wall art, sewing a 9x12 painter's drop cloth into a stunning, thrifty, couch slipcover, and deep cleaning the rest of the house! But instead I just do what HAS to be done every day and don't make these "extras" a priority! I should be making the most of these childless, semi-jobless days instead of somehow letting them drift by! I am busy every day, but I think I could be doing more! August is around the corner and before you know it, it will be time to be Christmas shopping! (goody! I can't wait! :) but...I'm veering off the subject here! sorry!) How do the rest of y'all accomplish what you aspire to? Make endless lists? Ask your hubby to nag you? Give yourself rewards for jobs done? :) I need help! Or am I just wishing to add more stress and business to my life? Some would be content to accomplish less....but I'm not....maybe I'm just a dreamer....instead of a do-er!

a tad turquoise


My thoughts are running along the deeper side of life today. I'm not feeling navy blue; just a tad turquoise...and I thought I'd post this abstract poem I wrote back in February. Inspired by the book A Garden to Keep by Jamie Langston Turner, I wrote it from the bottom up, starting with the ending line and finishing with the beginning. A rather interesting way to compose a poem, but fun nevertheless!



Shadows and Spaces

Learn to do well, relieve the oppressed.
Here's my heart, here's my hand.
This day of rest, this hour of calm
I turn my face to the sun.
The written word, the captured thought
Am I missing out on living?
My thoughts twist and writhe about...
To be truly, deeply aware of who I am.
I will sing again in the rain.
All things work together for good.
How can I see the plan?
The music of life lulls me to sleep...
Somthing within longs to grow.
A seed must be nutured.
So much to sample, to learn!
That what I would do, I do not.
How can I both love and abhore myself?!
Can life be explained?
The lines, the shadows, the spaces....
The unabashed romp of a rabbit,
The pure white of a petunia...
Beauty in the colors on display.
Pain so raw it drips.
How like life sometimes
A lemon is both sour and sweetness.

Chocolate Peanut Butter High-Hats!

 

I made these yesterday for a friend in lieu of a birthday present. They were super fun to make - dipping the buttercream was a blast! I didn't use this recipe for the cupcakes themselves, but I do think that it looks good! The only thing I would do differently next time would be to omit the salt since I used salted butter. Strange for me, salt-lover that I am, but peanut butter is naturally salty in itself. And a bonus of these sweet thangs is that they are "calorie-free!" {NOT!} Make them and see if a "high-hat" suits your style!
 

For the Chocolate Cupcakes

3/4 cup all purpose flour
1/3 cup cocoa powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup plus 2 tablespoons granulated sugar
1/2 cup buttermilk
1/3 cup vegetable oil
1 large egg
1 teaspoon pure vanilla extract

For the Peanut Butter Buttercream

1/2 cup granulated sugar
2 large egg whites
1/8 teaspoon salt
12 tablespoons softened unsalted butter,
cut into 1/2-inch pieces
1 cup peanut butter
2 teaspoons pure vanilla extract

For the Chocolate Coating
8 ounces semi-sweet chocolate, finely chopped
1 1/2 tablespoons vegetable oil

1. Heat oven to 350 degrees F. Line muffin pan with 10 cupcake cups.

2. In medium bowl combine flour, cocoa, baking soda, and salt. Set aside.

3. In larger bowl combine sugar, buttermilk, oil, egg, and vanilla until smooth. Add dry mixture and whisk until smooth. Spoon batter into cupcake cups, dividing evenly.

4. Bake 25 minutes or until center is just set. Let cool in pan for 10 minutes and then transfer cupcakes to wire rack. Cool completely.

5. While cupcakes are cooling, prepare the buttercream frosting. Combine sugar, egg whites, and salt in bowl of electric stand mixer.

6. Set bowl over pan of simmering water. Gently whisk until mixture registers 160 degrees F on instant-read thermometer.

7. Immediately transfer bowl to electric stand mixer. With whisk attachment, whip on medium-high speed until mixture resembles consistency of shaving cream.

8. On medium speed, add butter one piece at a time, until combined and creamy.

9. Whip in peanut butter and vanilla, and beat until smooth.

10. Transfer buttercream to pastry bag fitted with a plain 1/2-inch tip (#808).

11. Pipe 1/3 cup frosting onto each cupcake. Chill cupcakes in refrigerator until buttercream is completely firm, about 1 hour.

12. Once the cupcakes have chilled, make the chocolate coating. Place oil and chocolate in a medium bowl and melt over a pan of gently simmering water.

13. Stir until chocolate has melted and mixture is smooth. Transfer to a large coffee mug.

14. Holding cupcake by the bottom, carefully dip into the chocolate. Be sure to submerge all of the buttercream.

15. Pull up and hold for a few seconds to let excess chocolate drip off. Transfer to cooling rack and repeat with remaining cupcakes.

16. Before serving, let cupcakes rest a few minutes so chocolate can set.

Yield: 10 cupcakes. Active time: 1 hour. Total time: 3 hours

OREO FLUFF!


This recipe is absolutely amazing! I found it on pinterest - it's from http://www.chef-in-training.com/2012/06/oreo-fluff/ . We made it to take with us on the boat in Guntersville last time we were there. Make it today to compliment your Saturday grilling feast! {but hurry, so it can get good 'n cold!}

Ingredients

Instructions

  1. In a large bowl, whisk pudding mix and milk together for 2 minutes.
  2. Stir in Cool whip, crushed Oreos and mini marshmallows
  3. Store in fridge until ready to eat and serve. To me, the longer it is refrigerated, the better! It lets it thicken up and I prefer it colder.

I'm sitting up waiting on Danl to get home from shrimping....and since I abound with energy at night, I'm thinking of starting this quilt! I have a new quilting ruler thingy tool that I bought yesterday that is just itching to be used! But alas! I am not abounding with fabric in this amazing color combo! And the more I think about it, my energy is .....w....a....n...ing........and I'm remembering one of my favorite quotes - "Never do today what you can put off until tomorrow!" Isn't that how it goes?!

some super randomness


1. I am having Cocoa Rice Krispies for lunch.

2. A silly, slimy, scary, green, tree frog frightened the willies outta me the other night! (my knight in shining armor solemnly squashed it with his boot and saved the day!)

3. CHA should be letting me know any day now whether or not they intend to make an exception and cover the costs of my allergy shots. (fingers are double crossed...)

4. I really need/want a rocking chair, bench, or some kind of sitting apparatus for our front porch.

5. I spent some birthday $ at Jo Ann's during their "Coupon Commotion" yesterday for some more canvases and paints!

6. Daniel is going out on a shrimping expedition this afternoon/evening. It's his first time on a commercial shrimper I believe. (hope he comes home loaded down with the lil suckers! :)

7. Aunt Sue and I had an extremely enjoyable, leisurely shopping outing in Pensacola yesterday.

8. Steak 'n Shake's "Peanut Butter Banana Shake" is the BOMB!

9. I wish I could make $ being someones personal shopper....

10. I think something wonderful will happen today! (but only if I "carpe diem" and get off my bum!)

what we did...

This is a tad tardy, but I want to keep my promise of informing y'all of what all transpired when Jill and Jethro were here with us in the Sunshine State!

July 4 - Wednesday. THEY ARRIVED! After I recovered from having my socks shocked off, we ambled to Atmore for some lunch at Chen's Buffet. (nothing like celebrating America with some Chinese! lol!) We continued with the previous plan of frying chicken wings and okra for supper. The guys were rendered unmovable after all that good grease, so only Jill, Max, and I took in the fabulous fireworks show north of town.

July 5 - Thursday. Jill, Max, Mel, and I scooted off to Pensacola for the day! We admired the antiques at the store of Hwy 29, (can't remember the name of it!) browsed the bargains at TJMax, munched our monstrous lunch at Moes, carted ourselves through Cordova Mall, wandered around in World Market, and topped it off with fro-yo from TCBY! Max stayed with the men for the evening, while we women enjoyed Lissa Peters' bridal shower. The toilet paper brides were the highlight of the night!

July 6 - Friday. We slept in...and stayed local. Met some friends at the Coffee House for lunch, then shopped We Care and Dirt Cheap. Wades hosted us and my folks for a pizza supper complete with chocolate pudding cake, ice cream, and fresh pecan pie.

July 7 - Saturday. Beach Day! The aqua ocean was spectacular....the waves were crashing rhythmically against the sandy shore as we relaxed and ate our packed lunches in the shade of the beach umbrellas. It was Max's first beach experience! He loved the sand, but wasn't so keen on the waves! A perfect day in the sun until we heard the tragic news of my uncle's passing....

July 8 - Sunday. All too soon, we bid our dear friends adieu! Maybe we will get up the nerve someday to drive straight through the bleary night and return the  grand surprise gesture! ;)

a touch of chevron

Yesterday afternoon I indulged in a bit of retail therapy at Dirt Cheap, and this amazing chevron lampshade was my consolation prize! It's currently selling on target.com for $26.99 which is not the delightful, thrifty price of $8.72 that I paid. Luckily, it's in awesome condition; no dents and was still in the original wrapping! For all my chevron adoration, I didn't have the first hint of it in our home yet. (great intentions are planned though! such as navy chevron curtains in the studio/guest room, and a black and white chevron DIY paint job on my file cabinet) I love how this gold shade spruces up the living room atop my handmade cedar lamp from Grandpa Smith. It sure makes the couch cry out for a modern, neutral slipcover though.....

SURPRISE!!

Fourth of July of morning, I was getting around, and who walked into the bathroom but JILL and MAX!!! I was SHOCKED to say the least! :) And so thrilled! And Jethro was in the living room! They had left Tuesday afternoon and driven straight through. So we are having some fun-filled days which I will blog about later. They plan to head out Sunday morning, so we are living it up!

It's America's birthday tomorrow!!

Sure hope the sky will soon unburden itself.....the grass is getin' crispy and the road it's getin' dusty.

Our house is so clean for a change that it feels like we are trespassing.

Impossible Pie {page 225 in Friends and Family Cookbook} is impossible not to love! It even makes its own crust! How awesome is that?! Shame on me, but I was too lazy this past Sunday afternoon to make another batch of  pie crust; hence this pie is what I took to Ben and Erica's reception. Its purty ugly, so only 1 piece got gone! I wasn't sad though; the leftovers have been just the thing for breakfast the last two days!


I just finished reading American Sniper by Chris Kyle. What an amazing life! I have the deepest thankfulness to those who choose to give their lives to the effort of keeping America the land of the free. Their service enables me to live the nonresistant life I feel God wants me to. In gratitude, I want to give of myself by showing kindness, respect, and service to others in any way I can.


Tomorrow I will attempt to organize my stamping/card making hobby into my new, colorful, rolling organizer thingy that was a much-wished-for item on my birthday list! Thanks, Mom and Dad!


So glad blogger has auto-save! Daniel accidentally x-out my rough draft, but thankfully it was still there waiting for me to finish writing more nonsense when I logged back on!

wonderful weekend

I'm sadly behind with blogging! Here's to getting current!

FRIDAY




Daniel's mom and I shopped Foley! We had a delightful time browsing about Tree's N Trends, {LOVE that store! Didn't realize we had one local!} Olde Time Pottery, {where I snagged a fab, orange pot that will soon be my shrimp plant's new home!} Home Depot, Lowes, and the outlets! We lunched at the Wolf Bay Lodge, devouring the best fried shrimp po'boys and crispiest, sweet tater fries ever! We finished the day with ice cream from Stacey's Rexall Drugs,{my blue whale is still there waiting for me! Didn't purchase him since I'm trying to curb nonessential spending!} and since I hadn't ever had the "Burris Experience", we stopped in at Burris Farms for a quick tour and some coconut bars, diet cokes, and peaches! Loved the "Birthday Shopping Day!"
FRIDAY EVENING

The Royce Schneider Family celebrated the birthdays of Daniel, Anthony, Sharon, and Marilyn with one exotic disco supper! Fresh salsa, watermelon, homemade ice cream, cast iron skillet brownies, and blackberry cobbler complemented the meal. The evening ended in a perfect way with piles of presents and cards! :)


SATURDAY


The Schneider Family, sadly minus Daniel and Dad, went on a canoeing trip at the Magnolia Branch Wildlife Reserve! It was a splendid day - we had the river almost all to ourselves! We swam, dove, and just relaxed on the banks and every so often leisurely paddled our canoes a bit farther....Life on the river at its best!
